Ingredients:

  • 10 large shrimp
  • 1 mango
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 spring onion
  • 1 garlic clove, finely chopped
  • Salt
  • Sugar
  • Chicken stock powder
  • .67 fl oz vegetable oil
  • .11 oz potato starch
  • .17 fl oz oyster sauce

Directions:

Marinade the shrimp in salt, sugar and chicken stock powder and set aside for 10 to 15 minutes. Cut the mango, onion and peppers into medium size diamonds (1/2 inch) and boil them for 1-2 min in water with salt, sugar and chicken stock powdered. Boil the shrimp for 4 minutes. In a saucepan, lightly fry the garlic together with the mango, bell peppers and onion. Add the shrimp and enough water to produce a light sauce. Season with the sugar, chicken stock powder and oyster sauce. Dissolve the potato starch in water and toss gently to bind it all together.

Serving suggestions:

Place on a serving plate and garnish with chopped chives.
